Candied sweetness, very sweet, bright acidity, some bakers chocolate, red berries and a little orange with a smooth long finish.
Chiapas is a state in Mexico that borders the Guatemalan border and thus the coffees from this area are in our opinion a little brighter and sweeter than the rest of the other growing areas in Mexico – bearing more resemblance to the Huehuetenango growing areas of Guatemala.
This coffee from Finca Isabella de Triunfo is owned and managed by Alberto Preez. Alberto’s farm is 7.3 hectares of which 5.9 hectares are farmed with the average altitude sitting at 1200 masl and is very close to the El Triunfo Biosphere Reserve which is located in the highlands of the Sierra Madre de Chiapas.
The El Triunfo Biosphere Reserve that sits adjacent to Alberto’s farm is one of the world’s most diverse forest reserves and the surrounding areas contains Mesoamerica’s largest continuous cloud forest, and it serves as a refuge to thousands of plant and animal species.
The red cherries are as selectivity picked as possible and then an additional pre-sorting happens before wet processing on the farm to make double sure that only the best and ripest cherries are processed. The coffee is wet processed which consists of depulping the cherries and removing the fruit / and some of the mucilage on the beans through a washing process which is done on the day of harvest.
All our coffee is sold as whole beans, which we recommend for optimum flavour and freshness.
