COUNTRY INFORMATION

Chocolate / Toffee / Fudge

The most populous Spanish speaking country in the world and second most populous country in Latin America after Brazil.

Located at the southern end of North America, sharing its Northern border with the United States and Southern borders with Guatemala and Belize.

The Tropic of Cancer divides the country into temperate and tropical weather zones, giving Mexico one of the world's most diverse weather systems. The fragile ecosystems in Mexico are under constant threat, it has the second fastest rate of deforestation in the world, second only to Brazil.

The coffee industry saw substantial investment in the 1970’s, but following a collapse in the late 1980’s the industry declined along with its focus on quality. Coffee producers in Mexico have rallied together and the coffee industry has seen an impressive recovery.

Most farmers are small holders making coffee traceable to co-operatives and small holder groups. We have also traced some coffee to single estates for example around Chiapas, a state that borders Guatemala.

The coffee here is brighter and sweeter than other areas in Mexico, more similar in character to the Huehuetenango areas of Guatemala.

Typical flavour profiles in Mexico are quite broad from chocolate with sweet toffee fudge to the brighter coffee from Chiapas with red berry and orange notes.
